How do you roast a humbug?

What stuffing is suitable?

Recommended veggies to accompany?

Would a Baked Trifle be too crass to follow?

Well, over here in England the turkeys have caught a cold so they're off the menu: the number one organic turkey farm has been infected avian flu. So nows a good excuse for us to try goose for a change.

I'm having Turkey, flu or not. Stuff it. I bloody love Christmas. I wish it could be Christmas every day. Christmas means I get presents, and I do love getting presents. You can never have too much stuff, That's what I say. And the kids get stuff too, so I get to play with cool toys when they bugger off to bed. God bless the baby Jesus!

i daresay it will be turkey in our house again. thing is i think nowadays we all eat sooo much better that xmas dont seem that special anymore, i mean turkey is something we have a few times a year in our house, ive tried the goose bit and its very fatty as has been said, not keen at all on the duck unless its fried with pancakes and hoisin sauce lol.

i remember when i was a kid the whole xmas dinner thing was so special it was a really rare event to have all the stuff cooked and on the plate on just that one day, but not sure nowadays that its special at all anymore. yep fraid im bit of a xmas humbug lol

So try FISH !!! get a nice whole salmon-(gutted of course)-stuff it with a mixture of pecan nuts and raisins (that have been soaked in whiskey for at least 48hrs) wrap in foil and pop inthe oven(140 -nice and slow) for an hour (flesh should be dark pink-light pink not done yet)leave wrapped and allow to cool-open and remove the skin.Chill it and then serve with warm parsely pots and sour cream mixed with dill. Beef Wellington is also very good(dont forget the chinese mushrooms on top before you wrap it in the pastry) served with Grannys potatoes( boil spuds and parsnips lightly first-dust with seasoned flour then roast) garlic runner beans and lemon glazed carrots. Pudding? dont do pudding but lemon syllabub goes down a treat(not to heavy)---------------mummmmmm I was at college with Gary Rhodes-taught him all he knows :)

I have sarah's inlaws coming over for Christmas lunch this year and it's my turn too cook and I'm not allowed to go and buy any of the dishes from the take away so I have decided to go non traditional...

Starters: Giant mushrooms with garlic, phili. cheese spread, breadcrumbed and baked (Homemade)

Mains: Diamond cut Duckbreast slow grilled (at 165 degrees), covered with a red wine/plum sauce, roasted vegetables with spices and drizzled with honey, roasted potatoes.

Deserts: Sticky toffee poud.

nice one but sticky toffee puds a bit heavy-try this- Large carton of double cream-tip into a large bowl-stir in some sweet sherry(stick yeh finger in till your happy with the taste-should be fairly sweet) capful of whiskey the whisk till you get soft tops. turn into champagne and chill. Dust with cinnmon b4 serving and plop in a cinnamon stick.Enjoy

Did this 2 yrs ago.

Breakfast: Fire up BBQ, do garlic tiger prawns and crab claws with light salad all of course eaten in the garden.

Xmas dinner: Hotel, various starters Main was lobster with more seafood.
Pudding: Xmas pud of course with lashings of brandy and cream.

Crackers and cheese with port ( and more brandy)

Home: Snack out on loads of the usual (Twiglets are mine all mine and then the rest are mine as well as that hidden tube!)

Thai is still the idea i have this yr. I will probs plan the menu so to speak on Sunday.

Better get a load more chillies in and some fish sauce!
